Sheet Pan Ricotta-Chive Biscuits with Baked Eggs Recipe

Our sheet pan take on "egg-in-a-hole" is such a perfect play for a fun, and totally photogenic, weekend brunch. A slab of rich, tender, and herbaceous biscuit cradles just-right, over-easy eggs (you'll have set whites and delightfully runny yolks after 7 minutes of baking), drizzled with hot sauce and a sprinkling of fresh parsley. The best part? While your giant egg-filled biscuit slab lends itself to being served savory, the (normal-sized) biscuits you cut out to create holes for the eggs can be served up with sweet accouterments, like jam and honey butter, in order to achieve the ultimate sweet and savory breakfast balance. Of course, you can also just slice and serve the egg-filled biscuit portion with a side of bacon and fresh fruit, then pop your individual biscuits in a plastic zip-top bag and freeze for your emergency biscuit stash. Also, topping this entire situation with sausage gravy is not a bad idea either.

Giant Bacon-Green Chile Dutch Baby Recipe

Serving brunch to large group has never looked so easy or delicious as with our XL Dutch baby (I guess you could call it a Dutch adult). You can have this large, savory pancake—boasting gloriously crisp, golden brown edges, fluffy pockets dispersed through the center, and plenty of bacon goodness—for 8 on the table in under 40 minutes. Dutch babies are typically made in a preheated cast-iron skillet (and these are great for a smaller group, but less convenient if you're trying to serve more than 4 people); first, you melt butter in the pan, and then pour in the batter. The problem we encountered when trying to convert this cooking method to a sheet pan is that once you add butter to the preheated pan, the pan warps—making it impossible to evenly distribute the Dutch baby batter. But, unsurprisingly, bacon fixes this (and all) problem(s). The bacon cooking on the pan tempers it, which keeps it from warping with the heat, it also provides enough flavorful grease so that no butter is needed. That said, you'll still want to use your heaviest, flat sheet pan for this recipe, just to further minimize any risk of warping. If your oven has racks on smooth rolling casters, pull the rack out slightly to pour your batter into the pan, rather than removing the pan from the oven completely, to avoid any spills. We love the southwestern flair this fluffy pancake offers, but feel free to change up the flavor profile to suit your taste. And, of course, no one is going to complain if you decide to top it off with a few frizzled fried eggs as well. Serve with mimosas for an easily executed, utterly impressive brunch spread.

We took the classic sausage biscuit sandwich and made it mini. Adorable breakfast sliders, you have our hearts. 

Make a tray of small biscuits by baking the whole batch close together in a pan, then slicing the warm pastries into neat little squares. Next up: sheet tray eggs (add vegetables if you're so inclined), then cover them with sliced American cheese. Cut the cheese-covered eggs into squares the same size as the biscuit, then assemble your sandwich—don't forget the tiny sausage patty, and sides of Sriracha and mayo for dipping.

As much fun as it is to eat a pancake or doughnut in the morning, there are times when heartier dishes are in order. Enter breakfast disco fries. Like breakfast nachos, the disco fries are a massive meal that's fit for a crowd, yet easy enough to make on a lazy Sunday morning (probably without even needing to hit the grocery store).

Rip open a package of frozen french fries (or heck, use those leftover takeout fries from last night), dump them on a sheet pan, and bake until crispy. Meanwhile, fry up a bunch of bacon. Don't toss the drippings though, you'll need them for the next step: a zingy red eye gravy with beef stock, tomato juice, onions, and coffee—this stuff could actually create world peace if used properly. Fry a few eggs, and melt some shredded cheese over the cooked fries. Top the fries with the fries eggs and a heavy pour of gravy.

Making food can be hard, especially when you have to cook for a crowd. Between the performance anxiety and the logistical concern of preparing the same dish a few times over, throwing a brunch party is hardly as stress-free as it looks on your favorite food blog. Trust us when we tell you that now is the time to pull out your handy dandy list of big-batch breakfast recipes. With a sheet pan, an oven, and a little conviction, you can easily whip up brunch for a crowd. You want to make sunny-side up eggs? How about pancakes? French toast? No problem. But if you want to up the ante and pretend like you're a world class chef that wasn't at all flustered by the task at hand, then this sheet-pan egg recipe is for you.

Unless you're a short order cook with a giant greasy grill, making six or seven rapid fire omelets is nearly impossible. Instead, make a ton of bacon (that's just a given), grab some tomatoes, peppers, and onions, roast 'em like you know what you're doing, and mix them in with some tasty greens and a whole lot of eggs. Then all you have to do is pour it in a big pan, throw a few dollops of cheese on there, and pop it in the oven, and ta-da!

How to Make Sheet Tray Pancakes Recipe

If you've ever tried to make pancakes for more people than, well, yourself, you know it's quite a commitment. You're glued to the stove, pouring and flipping, while your friends sit at the table and eat. Then, by the time it's your turn for breakfast, the only pancakes left are cold or burnt. You don't have to take this anymore. You need to make sheet tray pancakes. Make an extra-large batch of your favorite pancake batter—you've got a lot of real estate to cover—the dump the entire batch onto a sheet tray. Cover it with toppings, and be creative (sliced fruit! chocolate chips! bacon bits!) then bake the whole thing in one fell swoop. Slice the warm pancakes into pieces, then serve as you would were they round.

My favorite way to entertain is to invite a bunch of friends over and lay everything out on the dining table: vegetables, pasta, quiche, breads, grains—you name it. I put out plates and forks and decorate the table with candles and cute seasonal vegetables—baby pumpkins and bouquets of sage in the fall, bunches of mint and carrots in the spring, bowlfuls of citrus fruit in the winter, and little fairytale eggplant or bright red cherry tomatoes in the summer. It's casual and fun, and encourages everyone to eat, drink, and socialize at will. Quiche is an ideal player for this kind of setup—it can be served warm or at room temperature and is just as happy on a brunch spread as it is at dinner or in the afternoon with tea.
