Recipe Makeover: Tasty Tuna Melt
I've always like grilled cheese with tuna. But yesterday I got to wondering how I could make a healthier sandwich. I decided to make the sandwiches open-faced, with added veggies, and broiled the sandwiches in the oven instead of frying them in a pan. The change in calories is moderate but measureable. The improvement in taste is big!
Serves 4
Prep time: 15 minutes
Ingredients:
- 4 slices french bread
- 4 ounces cheddar cheese
- 1 5-ounce can tuna
- 1 carrot, grated
- 4 cups spinach, chopped fine
- 2 tablespoons butter
Directions:
Butter each slice of bread. Broil in oven until bread is lightly browned. Remove from oven but leave broiler turned on. Grate carrots and chop spinach. In a medium sized bowl combine the veggies with drained tuna. (You can also add a tablespoon or two of Italian salad dressing if you'd like). Evenly divide the veggie/tuna mixture between the four slices of bread. Top with sliced cheese. Broil in oven until cheese is melted and getting browned bits. Enjoy!
