Perfect Potato Salad

Welcome summer with a salad featuring a trio of potatoes. Using three different colors is simply for presentation; feel free to use all of one type, if you prefer. If you do use different types, be sure to cook them separately. Blue potatoes are starchier, so they're best cooked on their own and added just before serving.
