Salmon, Meet Grill

This recipe proves that rules are meant to be broken. Although the rule of thumb is to pair fish with white wine, robust salmon pairs beautifully with a red wine-butter sauce. And while chopped beet may seem like an unusual ingredient, it gives the sauce an earthy sweetness and enhances the wine's brilliant red color.
