Roasted Garlic and Butternut Squash Cassoulet

A cassoulet is a classic country French dish made with white beans and sausage or other types of meat. It's covered and cooked slowly to allow time for all the flavors to blend. Instead of sausage, this hearty fall version features cubed butternut squash and pancetta. The garlic is roasted first, and then the pulp is added to the squash mixture before it's baked.
