Very good. Followed the recipe almost exactly. My husband even liked this, and zucchini is not one of his favorite vegetables. The citrus sauce is excellent.
Zucchini With Citrus-Herb Dressing
For an extra touch of flavor, top this dish with long Parmesan cheese curls created using a vegetable peeler.
Yield: Makes 4 servings
Ingredients
- 1 1/2 pounds medium zucchini
- 1/2 teaspoon salt
- 1 garlic clove, minced
- 2 tablespoons olive oil
- Citrus-Herb Dressing
- Garnish: lemon slices
Preparation
- Cut zucchini lengthwise in half, and cut into 1/4-inch-thick wedges about 1 1/2 inches long. Sprinkle wedges evenly with salt.
- Sauté minced garlic in hot oil in a skillet over medium-high heat until lightly browned. Add zucchini, and cook, stirring occasionally, 8 to 10 minutes or until tender.
- Pour Citrus-Herb Dressing over zucchini, tossing to coat. Garnish, if desired. Serve immediately.
