Zucchini Tots

The recipe as I found it made 12 mini tots, but my mini muffin pan has 24 holes so this recipe as you see it here is doubled. When I made the 12, Joe and I had no trouble eating 6 each! They are mere bites!

Ingredients

  • 2 whole(s) eggs

Preparation

  1. Preheat oven to 400 degrees

  2. 2 cups of zucchini, grated (about 2 medium)
  3. 2 eggs
  4. 1/2 onion, diced finely
  5. 1/2 c. cheddar cheese, grated (I used cheddar + parmesan)
  6. 1/2 c. Italian breadcrumbs
  7. salt & pepper to taste
  8. dash of Tabasco

  9. After grating the zucchini, place it in a tea towel and wring out the moisture.
  10. Mix the zucchini with the rest of the ingredients. Place in mini-muffin pan and push down to compact. Bake for 15-18 min. until golden. Makes 24 tots.
  11. These will probably freeze well!
