2 medium zucchini, thinly sliced
1/4 cup shaved Parmigiano- Reggiano cheese
2 tablespoons olive oil
1/2 teaspoon grated fresh lemon rind
1 tablespoon fresh lemon juice (about 1 small lemon)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 (3 1/2-ounce) container mâche


Combine first 7 ingredients in a large bowl, and toss. Let stand at room temperature 15 minutes.

. Add mâche, and toss well to coat. Serve immediately.
