Combine water and milk in a medium saucepan; bring to a boil. Stir in grits and next 4 ingredients. Cover, reduce heat, and simmer 5 to 7 minutes or until creamy, stirring occasionally.
Stir in cheese. Cook, uncovered, over medium heat until cheese melts and grits are thickened, stirring often.
