Ingredients

Dressing:
2 tablespoons extra-virgin olive oil
2 tablespoons sherry vinegar
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon freshly ground black pepper
Salad:
1 (10-ounce) package gourmet salad greens
1/4 cup finely chopped dried apricots
1/4 cup chopped pistachios

Preparation

1. To prepare dressing, combine all ingredients in a small bowl; stir with a whisk.

2. To prepare salad, combine all ingredients in a large bowl; add dressing.
