Winter Cabbage Salad

Yield 6 servings


  • 3 to 4 small fresh green beans
  • 1 1/2 cups shredded Napa cabbage
  • 1/2 cup shredded red cabbage
  • 1/4 red bell pepper, cut into thin strips
  • 1/4 yellow bell pepper, cut into thin strips
  • 1/4 green bell pepper, cut into thin strips
  • 2 carrots, scraped and cut into thin strips

How to Make It

  1. Cook green beans in boiling water 4 minutes or until crisp-tender; drain and thinly slice.

  2. Combine beans and remaining ingredients.
