Wine Consommé

Yield about 3 1/2 cups

Ingredients

  • 1 (10 3/4-ounce) can beef consommé, undiluted
  • 1 1/2 cups tomato juice
  • 1/2 cup rosé wine
  • Commercial sour cream
  • Chopped fresh chives

How to Make It

  1. Combine consommé and tomato juice in a medium saucepan; simmer over medium heat until thoroughly heated. Stir in wine, and simmer an additional 2 minutes.

  2. Serve consommé warm or chilled as an appetizer soup. Garnish each serving with a dollop of sour cream, and sprinkle with chopped chives.
