Wilted Spinach Salad

Ingredients

  • 6 slices bacon, cooked and chopped
  • 2 T bacon drippings
  • 2 T flour
  • 1 small onion, minced
  • 1 C water
  • 1/2 t dry mustard
  • 2 t red wine vinegar
  • 16 oz fresh spinach
  • to taste salt and pepper

Preparation

  1. Melt drippings, stir in flour and onion. Gradually stir in water, mustard, and vinegar. Cook over low heat stirring constantly. Add bacon and pour hot dressing over spinach. Toss.
