- 6 slices bacon, cooked and chopped
- 2 T bacon drippings
- 2 T flour
- 1 small onion, minced
- 1 C water
- 1/2 t dry mustard
- 2 t red wine vinegar
- 16 oz fresh spinach
- to taste salt and pepper
- Melt drippings, stir in flour and onion. Gradually stir in water, mustard, and vinegar. Cook over low heat stirring constantly. Add bacon and pour hot dressing over spinach. Toss.
