I love this recipe! It is quick, easy, and healthy! It works well with fish; salmon or cod. I get tired of salad, green beans and asparagus, so this is a nice change. None of my picky eaters will eat it but is quick and easy enough to fix just for me.
Fast, simple and easy! Since we're not big on salt, I sprinkled the spinach with a pinch of Kosher salt instead of the 1/4 tsp. salt listed in the recipe. Served it with turkey, stuffing & sweet potatoes. My husband loves spinach so this recipe only served 2 instead of 4 with nothing leftover. I will definitely make this again.
