To make simple syrup, combine equal amounts of sugar and water in a small saucepan; bring to a boil. Cook 1 minute or until sugar dissolves, stirring occasionally. Simple syrup keeps for up to 2 weeks in an airtight container in the fridge.

Yield: 4 servings (serving size: about 1/3 cup)

  • 1/2 cup El Tesoro tequila blanco
  • 1/4 cup Del Maguey San Luis Del Rio mezcal
  • 6 tablespoons fresh lime juice
  • 6 tablespoons simple syrup
  • 2 teaspoons pomegranate molasses
