  • 2 teaspoons olive oil
  • 3/4 cup whole wheat couscous
  • 1 cup fat-free, less-sodium chicken broth
  • 1/3 cup diced dried apricots
  • 1/3 cup slivered almonds, toasted


  1. 1. Heat oil in a medium saucepan over medium heat. Add couscous; sauté 1 minute. Stir in broth and apricots. Bring to a boil; remove from heat. Let stand 5 minutes or until liquid is absorbed. Add almonds; fluff with a fork.
