How to Make It

Step 1

Cream shortening; gradually add sugar, beating well. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in vanilla.

Step 2

Beat egg whites (at room temperature) until stiff peaks form. Gently fold into batter.

Step 3

Pour batter into 2 greased and floured 8 - inch round cake pans. Bake at 375° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans, and let cool completely.

Step 4

Spread Lemon Filling between layers; spread top and sides with Lemon Cream Frosting.
