White Chocolate-Lime Blondies

These cakelike blondies are good with or without the lime rind. The batter is very sticky, so coat your fingers with cooking spray to help press the dough into the pan.

Ingredients

  • 1/4 cup butter, softened
  • 1 1/4 cups packed brown sugar
  • 1 large egg
  • 1 large egg white
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate morsels
  • 1 tablespoon grated fresh lime rind (about 1 1/2 large limes)
  • Cooking spray

Preparation

  1. 1. Preheat oven to 350°.
  2. 2. Place butter and next 4 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
  3. 3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a bowl. Add flour mixture to butter mixture, stirring well. Fold in chocolate morsels and lime rind.
  4. 4. Press dough into an 8-inch square baking pan coated with cooking spray. Bake at 350° for 29 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.
