Grate half of cheese using the large holes of a box grater; grate remaining half of cheese using the small holes of box grater. Stir together mayonnaise and next 6 ingredients. Stir in Cheddar cheese until well blended. Let stand 15 minutes. Serve immediately, or cover and chill up to 3 days.
I've made this recipe a few times now and I love it! The flavor is so jazzy! I grow my own chives, so I always snip them fresh! I like to add a little extra Worcestershire sauce and some of the pimiento juice for even more flavor (careful not to make it too wet). This pimiento cheese is great as a sandwich on bread or as a snack/appetizer on crackers. It tastes even better the longer the flavors mingle!
