Had it tonight with BBQ shrimp. It was great. My husband didn't t know grits could taste so good. Used extra sharp cheddar, since that was all I had.
White Cheddar Cheese Grits
Yield: Makes 4 to 6 servings

- 2 cups chicken broth
- 2 tablespoons butter
- 1/2 cup uncooked quick-cooking grits
- 1 cup (4 oz.) shredded white Cheddar cheese
- 1. Bring chicken broth and butter to a boil in a medium saucepan over medium-high heat. Gradually whisk in grits, and return to a boil. Reduce heat to medium-low, and simmer, stirring occasionally, 5 minutes or until thickened. Stir in cheese until melted. Serve immediately.
