White Beans with Roasted Red Pepper and Pesto

    i loved this dish. it was flavorful and i had everything on hand...i didn't make the pesto, i used a jar i had in the pantry. i roasted the garlic, onion, and red pepper under the broiler until charred. i think this gave the dish an extra level of depth, along with the balsamic. i will definitely make this again. p.s. i don't have a pressure cooker so i just cooked it as i normally would cook beans.

    I am always looking for recipes to use my pressure cooker. It is such a time saver on a busy weeknight. This recipe was da bomb! Even my 15 year old was complimentary! I didn't make the pesto. I actually picked this because I had part of a jar of pesto that I needed to use up. Fantastic! I will definitely make this again.
