  • 1/2 cup canned white beans (rinsed and drained)
  • 1 1/2 tablespoons pesto
  • 1 teaspoon lemon juice
  • 2 slices whole-grain toast
  • 2 slices jarred roasted red pepper


  1. In a bowl, mash beans with pesto and lemon juice. Spread over whole-grain toast and top with roasted red pepper.
