White Bean-Pasta Salad

  • Yield: 6 servings (serving size: 1 1/3 cups)

Ingredients

  • 3 cups cooked rotini or other cork-screw-shaped pasta (6 ounces uncooked pasta)
  • 1 1/2 cups diced tomato
  • 1 1/3 cups diced cucumber
  • 1/2 cup coarsely chopped fresh basil
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 (15.5-ounce) can Great Northern beans or other white beans, rinsed and drained
  • 1 cup fat-free Italian dressing
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Preparation

Combine first 7 ingredients in a large bowl, and toss gently. Add dressing, salt, and black pepper; toss gently.
