1 (19-ounce) can cannellini beans, rinsed and drained
1/4 cup olive oil
2 large garlic cloves, pressed
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Garnish: chopped fresh parsley
Process first 6 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Garnish, if desired. Serve with raw vegetables.
