Whipped Turnip Puff

Yield Makes 8 servings


  • 8 medium turnips
  • 4 large eggs, lightly beaten
  • 2 cups soft breadcrumbs
  • 1/2 cup butter or margarine, melted
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/4 teaspoon pepper

How to Make It

  1. Peel turnips; cut into 1-inch cubes.

  2. Arrange turnips in a steamer basket over boiling water. Cover and steam 25 minutes or until tender.

  3. Mash turnips with a potato masher; stir in eggs and remaining ingredients. Spoon mixture into a lightly greased 11- x 7-inch baking dish.

  4. Bake mixture at 375° for 1 hour.
