Wheat Crackers

Yield about 6 dozen

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup plus 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 3/4 cup buttermilk

How to Make It

  1. Combine dry ingredients in a medium mixing bowl. Cut in butter with a pastry blender until mixture resembles coarse meal. Add buttermilk; stir with a fork until dry ingredients are moistened.

  2. Turn dough out onto a lightly floured surface; roll to 1/8-inch thickness. Cut into assorted shapes with cookie cutters; place crackers 1 inch apart on ungreased baking sheets. Prick top of each cracker several times with tines of a fork. Bake at 350° for 15 minutes or until lightly browned. Cool on wire racks. Serve with soups or stews.

  3. Note: Crackers may be stored in airtight containers.
