Place half of watermelon in a blender; process until smooth. Strain watermelon through a sieve into a pitcher; discard solids. Repeat procedure with the remaining watermelon. Stir in lime juice, sugar, 1/2 cup water, and dash of salt. Serve over ice.
Made this refreshing drink for the hot Memorial Day weekend - what a hit! I did think that the lime juice amount was a bit much, but after a splash of white rum, some muddled fresh mint leaves plus a few cubes of fresh watermelon, these drinks made fantastic mojitos! The prep (minus chopping up the watermelon) was 5 minutes total. 100% Keeper! Enjoy!!
