Watercress Soup

Ingredients

2 cups chicken broth
1 1/2 cups loosely packed watercress leaves
2 cucumbers, peeled, seeded, and chopped
1 green bell pepper, chopped
4 green onions, chopped
3 tablespoons chopped fresh dill
1/4 cup light mayonnaise
1/4 cup light sour cream
2 tablespoons sugar
3 tablespoons white wine vinegar
1 teaspoon salt
1/2 teaspoon pepper

Preparation

Process first 6 ingredients in a blender or food processor until mixture is smooth, stopping to scrape down sides. Add mayonnaise, sour cream, and remaining ingredients; process until blended. Cover and chill 8 hours.
