This fruit mixture also makes a great strudel filling.
2 1/4 cups
2 medium-size Granny Smith apples, peeled and diced
1 firm ripe pear, peeled and diced
2 tablespoons brown sugar
2 tablespoons finely chopped dried cherries
1 tablespoon plus 1 teaspoon finely chopped orange rind
1 tablespoon finely chopped lemon rind
1 tablespoon finely chopped dried apricots
1 tablespoon currants
1/2 teaspoon ground cardamom
Pinch of freshly grated nutmeg
1 cup apple cider
1 tablespoon applejack (optional)
2 teaspoons fresh lemon juice
Combine all ingredients in large saucepan; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes or until apple and pear are tender, stirring often.
