2 servings (serving size: 1 chicken breast half, 1 cup spinach mixture, 1/2 cup apple, and 2 tablespoons cheese)

How to Make It

Step 1

Sprinkle chicken with 1/8 teaspoon salt. Place a nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes on each side or until done. Slice into thin strips. Set aside; keep warm. Toss apple with lemon juice; set aside.

Step 2

Combine cornstarch and broth in a bowl; add to skillet. Bring to a boil. Cook 1 minute; stir constantly. Reduce heat to medium. Add jelly and next 5 ingredients (jelly through garlic); stir with a whisk. Add spinach and radicchio; cook 2 minutes or until spinach slightly wilts. Divide spinach mixture between 2 plates. Top with chicken and apple; sprinkle with cheese.

Note: If radicchio is not available, increse the amount of spinach to 7 cups.
