- 1/2 teaspoon curry powder
- 1/8 teaspoon crushed red pepper
- 1 shallot, minced
- 2 teaspoons olive oil
- 2 cups okra, halved lengthwise
- 1/4 teaspoon salt
- Toast curry powder, crushed red pepper, and minced shallot in olive oil in a skillet over medium-low heat 2 minutes or until fragrant. Increase heat to high. Add okra; cook 3 minutes or just until tender. Sprinkle with salt.
