Warm Pineapple Salsa
Ingredients
- 2 shallots, finely chopped
- 1 jalapeño pepper, minced
- 1 1/2 teaspoons grated fresh ginger
- Vegetable cooking spray
- 1 1/4 cups fresh orange juice
- 1 pineapple, peeled and chopped
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh basil
- 1/2 teaspoon curry powder
Preparation
- Sauté first 3 ingredients in a skillet coated with cooking spray over high heat 2 minutes. Add juice, and cook 5 minutes or until mixture is reduced by half. Stir in pineapple and remaining ingredients; reduce heat to low, and cook until thoroughly heated.
