Warm Pineapple Salsa

Yield 6 to 8 servings


  • 2 shallots, finely chopped
  • 1 jalapeño pepper, minced
  • 1 1/2 teaspoons grated fresh ginger
  • Vegetable cooking spray
  • 1 1/4 cups fresh orange juice
  • 1 pineapple, peeled and chopped
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon curry powder

How to Make It

  1. Sauté first 3 ingredients in a skillet coated with cooking spray over high heat 2 minutes. Add juice, and cook 5 minutes or until mixture is reduced by half. Stir in pineapple and remaining ingredients; reduce heat to low, and cook until thoroughly heated.
