Warm Bacon Vinaigrette

This Warm Bacon Vinaigrette recipe goes with Grilled Farm Potatoes.

Ingredients

3 strips bacon, finely diced
2 tablespoons water
2 1/2 tablespoons extra-virgin olive oil
3 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Preparation

Cook bacon and water in a medium skillet over medium heat 4 minutes or until water has evaporated. Add oil; cook 2 minutes or until bacon is crisp. Remove from heat, and pour into a small bowl. Whisk in vinegar and remaining ingredients.
