I made this exactly as written and it was wonderful. I cooked it last night and put it in the fridge for lunch today - just kept the cheese and walnuts separate. It held up great. The oats are quite chewy - I liked them that way, but I could see making this with other grains as well (quinoa or brown rice, maybe) if you don't.

I made this for a party this weekend, and it got RAVE reviews from the party guests. I sent out the recipe to several people after the party! Everyone was amazed at the combination of steel-cut oats with a waldorf salad. So nutty, flavorful, and healthy! And it was the first time I had used steel-cut oats and am now so excited to introduce this into our food repertoire! Such a great alternate to rice, quinoa and couscous. This is my new favorite breakfast. It's hearty enough to hold me to lunch. I just cut the portion size a little and don't eat it on the arugula.
