Photo: Andrew McCaul
Yield Makes 4 servings (serving size: 8 tomatoes)
Enjoy the refreshing flavor of Vodka-Spiked Tomatoes with Lemon Salt--a perfect summer side for a hot day. By using red produce, like cherry tomatoes, you may be lowering your risk of heart disease and stroke because of the cancer-fighting lycopene and anthocyanin contained in them. Prep: 15 minutes; Cook: 1 minute.

  • 1/4 cup vodka
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons sugar
