Virginia Creamed Chicken

Yield 6 servings

Ingredients

  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • Dash of red pepper
  • 1 cup diced cooked chicken
  • 1 tablespoon sherry
  • 6 slices toast

How to Make It

  1. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Add chicken; cook until chicken is thoroughly heated. Stir in sherry. Spoon over toast slices.
