This is a great dressing for mixed greens and tasted better than a store bought bottle at a fraction of the cost.
Vidalia Onion Vinaigrette

Serve this lively dressing over your favorite blend of salad greens.
Yield: Makes 2 2/3 cups
- 1 Vidalia or other sweet onion
- 3/4 cup sugar
- 1/3 cup red wine vinegar
- 1 tablespoon dry mustard
- 1 teaspoon salt
- 1 cup olive oil
- 1 1/2 teaspoons poppy seeds
- Pulse onion in a food processor just until finely minced. Add sugar and next 3 ingredients; process until well-combined. With processor running, add oil in a slow, steady stream. Stir in poppy seeds.
