Ingredients

  • 2 cups water
  • 2 cups sugar
  • 2 cups apple cider vinegar
  • 1/4 cup gin
  • 2 tablespoons salt
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery salt
  • 1/2 teaspoon dried crushed red pepper
  • 4 bay leaves, crushed
  • 3 pounds Vidalia onions, finely chopped
  • 3 pounds fresh peaches, peeled and chopped
  • 4 garlic cloves, thinly sliced

Preparation

  1. 1. Bring water, sugar, vinegar, gin, salt, mustard seeds, celery salt, dried crushed red pepper, and crushed bay leaves to a boil in a Dutch oven over medium-high heat. Add Vidalia onions, peaches, and garlic; boil, stirring occasionally, 15 minutes. Let mixture cool completely (about 2 hours). Store in airtight containers in refrigerator up to 2 weeks.
