Vegetarian Vegetable Minestrone Soup
Wonderful & very flavorful! Used water instead of broth and added about 1/2 Cup of fresh chopped fennel and celery leaves, 1 Cup chopped celery, 1/2 Cup of flatleaf parsley, omitted the wine, 2 cans of Cannelini Beans with liquid (omitted the garbanzos), and 1 Can of Italian style plum tomatoes with garlic & basil - - entirely vegetarian. Did include the parmesan rinds and grated parmesan at end, and sprinkled with chopped flatleaf parsley for serving. Yummy!
