  • 1 tablespoon(s) olive oil
  • 1 Onion Chopped
  • 1 box(es) Smart life crumbles
  • 1 Carrot Chopped
  • 1 Red pepper
  • 1 Green or yellow pepper
  • 1 can(s) Red kidney beans
  • 1 can(s) black beans
  • 1 can(s) diced tomatoes
  • 2 cup(s) Water
  • 1 tablespoon(s) Cumin
  • 1/2 teaspoon(s) Chili powder
  • 1 teaspoon(s) Cinnamon
  • 1 can(s) Corn

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions. Cook for a few minutes before adding soy crumbles. Cook for 3-4 minutes, until crumbles are browned and onions are transparent. Add chopped carrots and peppers. Cook for another 5 minutes until softened.
  2. Stir in beans, corn, and tomatoes. Add spices and one cup water. Simmer for 10 minutes. Add second cup of water and simmer for additional 10 minutes. Stir frequently so chili doesn't stick to the skillet.
