Vegetarian Bolognese with Whole-Wheat Penne

    I thought this was an excellent vegetarian pasta dish. I am Italian, therefore very critical of all pasta sauces. I have to say this was an extremely delicious change from the standard marina and definitely lived up to the bolognese style minus the meat which I didn't miss in the least. Two things are a must - the ground dried porcinis and the Parm Reg rind...without them I don't think the dish would have as much depth of flavor. Everyone loved this - bf and kids. If I needed a vegetarian dish to serve to company this would be it. Yum!

    My husband and I enjoyed this dish. It was definitely "meaty" despite being vegetarian. The ground porcini mushrooms added a strong earthy flavor that some might find objectionable, namely my five-year-old. I added some minced garlic to this recipe because I cannot imagine a pasta sauce without it. Otherwise, I followed the recipe to a T.

    When I asked my husband if he wanted this for dinner he said, "If you add chicken sausage." I had on hand spicy chicken jalapeno sausage, which I cut into chunks and sauteed (even though it is precooked). It was great, but spicy. Used whole wheat orecchiete. Great, comfort meal but wouldn't serve to company.

    Great taste!! It was difficult to grind the porcino mushrooms but it was worth it. I will be putting this on my list of regular meals.

    Overall, I thought this was good, but not excellent. The porcini and cremini mushrooms give it a nice, earthy taste.

    Needs a bit more salt, but very good. Next time I will throw in a bigger cheese rind.

    This recipe was very good, would definitely make again. Instead of water, I substituted vegetable stock. Also, I did not cheese rind, so just added Romano cheese. Also, added a little extra dried basil, and a little sugar to the sauce. Very tasty. You can have a salad, and you have a great meal. Enjoy

    I had a small dinner party; friends asked to take some for left-overs. This was an absolutely yummy alternative to the real thing.

    I followed the recipe to a T, and both my husband and I loved it. He liked the meatiness of it, and I loved the flavor and how filling it was. Next time, I may leave out the rind, and just add grated cheese to the finished dish.

    One of our kids decided to be vegan for lent. He also doesn't care for mushrooms, at least if he can see them. As a result, I needed to modify this recipe but wanted to keep the umami flavors. I deleted the cheese rind, added 1/2 cup chopped, pitted kalamata olives and a tablespoon of vegan pesto. It received the approval of all 3 teenaged boys plus the adults were raving.

    Delicious. Husband and I enjoyed this very much. I added 2 cloves of garlic, some oregano and basil. I added more salt and pepper. Will definitely make again.

    This was really tasty. I used portobellos instead of cremini and it was super yummy. The wine I used was a bit too sweet, so pay attention to what you use as it affects the flavor more than you would think. This was easy to make and had great texture, not just mushy vegetables. I mixed (1/2 & 1/2) regular and wheat pasta and it was a lovely flavor and texture combination. I would absolutely recommend this one! Yuuuuum yum. My only change would be to spice it up a bit more...maybe a little heat (red pepper flakes), more basil, oregano, some garlic, etc.

    Very good. We omitted the porcini mushrooms (personal preference). I could only find regular crushed tomatoes, so added 3 Tbsp dried basil and 1 tsp oregano.

    This was delicious. One of the best vegetarian meals I've made in a long time. We didn't even miss the meat. Also, my husband gobbled it up and he hates mushrooms...so he thinks (wink).

    This was delicious, even for my meat-loving husband! I didn't have the parmesan rind, but it still came out great.
