    FABULOUS!! added some mrs dash garlic and herb seasoning to keep the sodium content from creeping up. my husband practically licked his plate.

    Delicious! Easy; you can make it and throw it in the oven to cook for a while. It's also really easy to add new vegetables...if you have some leftovers that you need to use up! Great vegetarian dish, and healthy (if you reduce the cheese!). I also use home-made polenta and spread thick layers instead of using pre-made tubes...

    Loved how easy & economical this recipe was - compared to regular lasagna which is quite labor intensive. The convenience of the prepared polenta tubes is a plus, I like to get the flavored ones like basil or sundried tomatoes - they're really inexpensive at Trader Joes. This dish is a bit light on the protein, so I added a can of drained & rinsed cannellini beans (but any beans would work). Also, next time I'll make it with some fresh herbs or italian seasonings. LOVE that you can use almost any veggie in your fridge in this!!

    This was so delicious and very quick and easy to make. The measurements for the tomato sauce appear to be off, but I just put in what it looks like it needs. We paired it with roasted asparagus and sourdough bread. Will make again!
