    This was good and quite easy. I used a 6 oz. bag of baby spinach and added shredded carrots & chopped orange bell pepper for extra veggies. The only problem was that the corn tortillas became mushy in texture after being baked with the sauce. Maybe it was the brand I used, or perhaps I should have crisped them first in the oven before assembling? Any suggestions? With that problem solved, I might give it 4 stars.

    Everyone loves this recipe! It was a huge hit at an Oscar party. I've made it several times.
