How to Make It

Combine agave nectar and 3 whole mint sprigs in a small saucepan over medium heat. Cook 5 minutes; remove from heat. Let stand 10 minutes; strain. Discard solids. Combine cooled agave, tofu, cocoa, vanilla, and salt in the bowl of a food processor; process until smooth. Divide among 4 small bowls; garnish, if desired.
