Vanilla-Scented Harvest Crisp with Pistachios

    This is amazing! And it makes your house smell so wonderful. I was craving a fall-type dessert and this really hit the spot. I wasn't sure about the pistachios, but they actually really bring the whole dish together when they're toasted. Serve with a scoop of vanilla bean ice cream and it's perfect!     Soooo good. I wish I had figs, though, I just used raisins, but the aroma while it cooked on the stove just screamed for figs. I also used apple juice instead of apricot nectar and it still tasted delicious. Might be good with pears, also. Thinking about making this in the fall for a special occasion, but I'm not sure which one yet!

    Served this for our dinner group last night with raves! Used dates rather than figs, orange juice rather than apricot nectar, and skipped the butter in the fruit filling. Topped the hot crisp with a scoop of vanilla ice cream. Yummy! Made 9 generous servings.
