How to Make It

Place the rice in a saucepan with the milk, sweetener, and vanilla pod. Bring to a boil; reduce the heat, and simmer gently for about 30 minutes, stirring frequently until the rice is creamy and tender. Remove from the heat, and serve warm or cold.

 

Chef's Notes

Smart tip: Use leftovers to make an easy mango brûlée for non-fast days (199 cals). Pop 1/4 cup sliced mango in a ramekin, top with rice pudding, sprinkle with 1 tsp sugar, and broil until brown.
