Vanilla Cream

Yield 8 servings
Omit rum extract, and add a shot of rum to each serving for a potent refresher.


  • 1 1/2 quarts milk
  • 1 (3.4-ounce) package vanilla instant pudding mix
  • 2 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons rum extract
  • 2 pints vanilla ice cream
  • 1 cup whipping cream, whipped
  • Freshly grated nutmeg

How to Make It

  1. Whisk together milk and vanilla pudding mix in a bowl until pudding mix dissolves (about 2 minutes).

  2. Cover and chill mixture 15 minutes or until thickened.

  3. Add sugar, vanilla, and rum extract, stirring until sugar dissolves.

  4. Cover and chill at least 1 hour. Pour mixture into cups, and top each serving with a scoop of ice cream and a dollop of whipped cream; sprinkle with freshly grated nutmeg.
