Mix and sift flour, baking pwd., and salt. Combine brown sugar and butter in 8 -inch frying pan and stir over low heat unil thoroughly blended. Arrange fruit in brown sugar mixture. (Place a cherry in center of pineapple ring, if using pineapple) Stir sugar slowly into well-beaten egg yolks, add hot water slowly and beat well. Add vanilla and dry ingredients. Fold in stiffly beaten egg whites. Pour batter carefully over fruit. Bake @ 350 for 50 minutes, While hot, invert on serving platter and let stand 1 minute before loosening from pan.
