Ingredients
- 2 (10 oz.) packages frozen baby lima beans
- 1/4 cup vegetable oil
- 3 ribs celery, chopped
- 2 small red onions, chopped
- 3 large, ripe tomatoes, cored, seeded and chopped
- 1 cup fresh or frozen corn kernels
- 1/4 cup cider vinegar
- Salt and pepper
- 1/2 cup chopped basil
Preparation
- Cook lima beans in 1 cup boiling water for 10 minutes; rinse and drain.
- In skillet, heat oil over medium heat. Add celery and onions; cook for 4 minutes. Add lima beans, tomatoes, corn and vinegar; season with salt and pepper. Cook for 2 minutes. Toss with basil.
